After shopping on Saturday we took Lulu out for alittle spin on her trike. She loves it - we take her all the way around the lake. And look out if she should happen to see it when there's no time for a ride... that's sure to set off the waterworks!
These are poffertjes. They are tiny little Dutch pancakes (pronounced "po'ffert-chuz.") You may have seen a pan that you can buy for them in the William Sonoma catalog. Bas's Mom brought us her extra poffertje pan when she was here last week, along with some poffertje mix. They're a bit time consuming, and nerve wracking to make (you need perfect timing for the flip, and a special twitch to the wrist.) We had them on Saturday and Sunday mornings.
We had another family over for dinner on Sunday night. I made cupcakes from scratch. They are awesome. The chocolate cake mix isn't as good as my Mom's recipe - but the icing was to DIE for. If you want the recipe let me know, I'll send it to you - but it involves, among other things, a jar of marshmellow Fluff (I know - sounds gross - but you can't taste it all in the end) and THREE sticks of butter! It is a new personal favorite.
The family we had over was Dutch - one of Bas's colleagues, his wife, and their two kids. We had a nice time, but I was in the kitchen all day. Since we had kids here, but also wanted some grown up food, we had...
1. bacon cheese burgers
2. steaks
3. baked scallops
4. green beans w/ bacon
5. potato croquettes
6. cupcakes
I love doing it though, so it was worth it! The biggest challenge was that the stores are all closed on Sunday. So I had to do all the shopping on Saturday. So before dinner on Saturday I sent Bas BACK to the store for ice cream and ketchup. And then halfway through Saturday night dinner I realized I'd completely forgotten about the hamburger buns! (who does that?) so as soon as dinner was over, he ran back to the store just before it closed! I swear - even if I am soooooo careful with making a list, there's ALWAYS something!
